In the mapfile you should add/modify a QUERYMAP section and set the
colour in RGB there, e.g.:

QUERYMAP
  STATUS ON
  STYLE hilite
  COLOR 0 200 0
END

This will highlight selected features using green colour.

BTW, the default is yellow, as far as I know.
