Have you considered using MapServer query templates in your WMS server 
and then call GetFeatureInfo with INFO_FORMAT=text/html?

Using the templates you can control the way the information is displayed 
(i.e. alias for column names) and you can select the columns to display. 
  I'm not sure what you meant by filtering based on null values so the 
templates may or may not do what you want for that.
