[Mapserver-users] OT: interesting non-mapserver application

Not per se with mapserver, but I think you can use OWTChart
   http://maptools.org/owtchart/index.phtml
I would think that you could create and write the pie charts to a tmp 
dir and then use them as symbols in mapserver.
