Right now you just can't as PostGIS connection is set once for the  
whole service.

So you have either to aggregate your databases into a single one (SQL  
Schemas could be helpfull)
or to have several TinyOWS instance (one per database)



If someone want to provide a patch to enhance this feature,
it will be welcome
