you can do that by seting a css property overflow:scroll to the edit_div div element in your cartclient.tpl. Maybe you will have to manualy define the width too.
or you can use the editResultNbCol config option to specify the max number of column (attributes) of the edition formular. In that case, the inputs will simlpy by displayed on several lines:
editResultNbCol = x (see documentation http://www.cartoweb.org/doc_head/docbook/xhtml/user.edit.html)

When I select the poligon on the map the table of data enlarge the page is possible reduce the table to a dimension of map and use a orizontal scrollbar to view the field of the table?
