If you want to get it working now add:
compressformats="ZIP,TGZ" as an attribute to the ExtractWFSData CWC2 tag
in the template.
In next releases it will change though to optional child elements:
<cwc2 type="ExtractWFSData" ...>
<compressionformat value="ZIP" />
<compressionformat value="TGZ" />
</cwc2>
